Kashiwa's Memories

In this corner, to get to know more about Kashiwa through history from its citizens, a series will be published every month on the 15th for one year.
Let's follow along as we celebrate 60 years of memories for Kashiwa City this year.

The Story of Hananoi Soy Sauce 2 〜The final days of soy sauce production〜

Soy sauce is divided into 5 categories according to quality: The "saiuwamono" best grade, the "uwamono" high grade, the "namimono" medium grade and the "gemono" basic grade. The high grade soy sauce in the Yoshida family's production was the "Kikkochiyo" brand, the medium grade was the "Jigami Hananoi" brand, and the basic grade was labelled as the "Kagika" brand. In the beginning, the Yoshida family sold the high grade "Kikkochiyo" in the Tokyo market. When the middle of the Meiji Period came along, the brand was pushed out by the best grade soy sauce from the large soy sauce producers in Noda and Choshi, and production shifted to the medium grade "Jigami Hananoi". The sales returned for a while, but by the end of the Meiji Period, the preferences of the market had turned to higher quality products, and the Yoshida family resorted to making its way in the local markets.
From the Meiji period, the railroad network with Tokyo as the railhead was built outwards in a radial pattern, and in 1896, Kashiwa Station was opened with the establishment of the Joban line between Tabata and Tsuchiura.
In addition, even the Yoshida family built a shipping road from their own private funds to connect Hananoi and Kashiwa Station. Through the railroad cargo system, the sales network spread to the local regions of north Kanto.
At that time, the brand labels were renewed as "Kikkohokusei", "Kikkomizuumi", "Kikkokyuboshi", "Odama" and "Jigami Suzuki", and introduced to the local areas. These labels marked the soy sauce products, and special designs were created for each area of production. The Yoshida family used the Kikko-style label for many products.
In this way, the Yoshida family continued to grow their business in the local areas. However, although they worked hard at their business,  managing to keep the price of raw materials down, their business was sold to the Noda Soy Sauce Company (currently Kikkoman) in 1922. There are some records remaining that show shipments from the Noda Soy Sauce Company Hananoi Factory, but shortly after, soy sauce production came to an end.
